OPTIONAL CUTS

If you do not select these cuts then the cuts will be ground up for more hamburger.

  • Brisket – Definitely keep this if you have a smoker.  This roast is not the best in the oven because it needs to cook at a low temperature for a long time for it to come out moist and tender.
  • Flank Steak & Skirt Steak – These steaks are high in connective tissue and are best marinated.  These steaks are great for fajitas.  There is only one steak on each side of beef so it does not amount to much steak.
